Cabbage Rolls
1 pound ground beef or turkey
1 large onion, chopped
1 cup bread crumbs
1 teaspoon salt
1 teaspoon pepper
1 egg, slightly beaten with 1/2 cup water
2 cups tomato juice
6 large cabbage leaves
Mix ground beef or turkey, onion, bread crumbs, salt, pepper and egg-water mixture. Soften cabbage leaves in boiling water. Press meat mixture into 6 rolls. Place each roll on a leaf. Roll up. Place in a Dutch oven, seam side down. Pour tomato juice over all. Bring to a boil. Turn down heat and simmer for 1 hour.

2 cn Tuna, chunky - 6/ oz each 3 c Egg noodles, uncooked 1/2 c Celery, chopped 1/3 c Green onions, sliced 1/2 c Sour cream 2 ts Dry mustard 1/2 c Miracle whip 1/2 ts Thyme 1/4 ts Salt 1 Zucchini, sliced 1 c Monterey Jack Cheese 1 Tomato, chopped Drain & Flake the Tuna and set it aside for later. Cook the noodles according to the manufacturers instructions then drain & rinse in hot water. Combine the noodles with the tuna, celery, and green onions. Blend in the sour cream, mustard, miracle whip, thyme and salt. spoon half of the mixture into a buttered 2 quart casserole dish. top with half the zucchini, then add the rest of the mixture, and again,m add remainder of zucchini. Cover the dish. Microwave at high power for 6-8 minutes. Top the dish with the cheese and tomato. Microwave at high power for 2 more minutes, and let stand for 3 minutes before serving. Notes: Microwaves range in times required for cooking because of the wattage they use. the one I use is a 1000 watt Sanyo oven. This dish is approx. 400 calories & 24 grams carbohydrates per serving.

Ritzy Chicken
8 ounces cream cheese
1/2 cup sour cream
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup finely chopped onion
6 cups diced cooked chicken breasts
1 roll Ritz crackers (50 crackers)
1/2 cup (1 stick) melted butter
2 tablespoons poppy seeds, divided
Soften cream cheese. Add sour cream, soups, chopped onion and chicken. Pour into a 9 x 13-inch ovenproof baking dish.
To make topping, crush crackers to make crumbs. Combine with butter. Add half of poppy seeds. Sprinkle over chicken mixture.
Top casserole with remaining poppy seeds. Bake uncovered at 350 degrees for 20 minutes.
Serves 10.

3/4 cup Monterey Jack or Swiss cheese — shredded, divided 1/2 cup Ricotta cheese 1/2 cup mayo or salad dressing 1/4 teaspoon garlic salt 1 dash pepper 1 1/2 cups rice — cooked 1 10 oz pkg frozen chopped spinach — thawed and drained 2 tablespoons green onion — sliced Combine 5/8 C cheese and next four ingredients in a large bowl; stir in rice, spinach and green onions. Spoon mixture into a lightly greased 1-qt casserole dish. Bake, uncovered, at 375F for 20 min. Sprinkle casserole with remaining 1/8 c cheese and bake additional 5 min.

Barbecue Chicken
1 frying chicken, cut up or quartered
1 can condensed tomato soup
3/4 cup chopped onion
1/4 cup vinegar
3 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon sweet basil
1/4 teaspoon thyme
Place chicken in crockpot. Combine all other ingredients and pour over chicken. Cover tightly and cook on LOW setting for 6 to 8 hours.
Yields 4 servings.

White Chicken Chili
1 large onion, chopped (about 1 cup)
1 clove garlic, finely chopped
1/4 cup butter or margarine
4 cups chicken breast, 1/2-inch cubes
3 cups chicken broth
2 tablespoons snipped cilantro or parsley
1 tablespoon dried basil leaves
2 teaspoons ground red chiles
1/4 teaspoon ground cloves
2 (16 ounce) cans great northern beans
1 can white shoe peg corn, drained
Saut? onion and garlic in butter over low heat, stirring until lightly browned. Stir in remaining ingredients. Heat to a boil. Reduce heat and simmer 1 hour, stirring occasionally.
Serve topped with fresh chopped tomatoes, sour cream and tortilla chips.
Makes 6 servings (1 1/2 cups each).

Souper Chicken
3 whole boneless, skinless chicken breasts, halved
2 tablespoons lemon juice
1/2 teaspoon celery salt
1/2 teaspoon pepper
1/2 teaspoon paprika
1 can cream of celery soup
1 can cream of mushroom soup
1/3 cup wine
Grated Parmesan cheese
Rice for serving
In small bowl blend together, lemon juice, celery salt, pepper and paprika. Rub this over the chicken and then place the chicken in the crockpot.
In a medium bowl blend together the soups and wine and pour over the chicken. Sprinkle with cheese and cover and cook on LOW for 6 to 8 hours.
Yields 4 to 6 servings.

Diner Chicken
2 ( 2 1/2 pound) chickens, cut into eighths
1 onion, chopped
2 cloves garlic, chopped
Salt and pepper, to taste
1 green bell pepper, diced
1 medium ripe tomato, peeled, seeded and chopped
1 cup dry white wine
Pinch of cayenne pepper
Combine all ingredients in a crockpot. Cover crockpot and cook on LOW for 6 to 8 hours, or until chicken is tender.
Serves 6 to 8.

Wild West Casserole
1 onion, chopped
1 1/2 pounds ground chuck, browned and drained
6 medium potatoes. sliced
1 can red beans
1 can tomatoes mixed with 2 tablespoons flour or 1 can tomato soup
Salt
Pepper
Garlic
Put chopped onion in the bottom of the crockpot; layer with browned ground beef, sliced potatoes, and beans. Spread tomato mixture or soup over all. Sprinkle with seasonings as desired. Cover and cook on LOW for 7 to 9 hours.
Serves 4 to 6.

1 lb Fresh or frozen asparagas, - cut into 1 inch pieces 1 tb Cornstarch 1 1/2 c Milk, divided 2 tb Butter or margarine 1 ts Salt 1/2 ts Pepper 1/2 ts Dried parsley flakes 1 1/2 lb Fully cooked ham, cubed 3 Hard cooked eggs, chopped 2 c Shredded cheddar cheese - (8 oz.) Toast points or biscuits In a saucepan, cook asparagas in a small amount of water until tender; drain and set aside. In a medium saucepan, mix cornstarch and 2 tb. milk. Add butter, salt, pepper and remaining milk; cook and stir over medium heat until thickened and bubbly. Add parsley, ham, eggs, cheese and asparagas; cook and stir over low heat until ham is warmed and cheese is melted. Serve over toast points or biscuits.
