<p><TABLE cellSpacing="2" cellPadding="3" border="0"><TBODY><TR><TD><P>2 c Cubed, fully cooked ham <P>8 md Potatoes, peeled &amp; thinly <P>-sliced (6-cups) 1/4 c Finely chopped onion <P>1/2 c All-purpose flour <P>2 c Milk <P>3 tb Fine dry bread crumbs <P>1 tb Butter or margarine, melted <P>2 tb Finely snipped parsley <P>Place half the ham in a 2-qt casserole. Cover with half the potatoes and half the onion. Sift half the flour over; season with salt and pepper. Repeat layering ham, potatoes and onion. Season with additional salt and pepper. Sift remaining flour atop. Pour milk over all. Bake covered at 350 till potatoes are nearly tender, 1 to 1 1/4 hours. Uncover. Combine bread crumbs and melted butter; sprinkle atop casserole. Top with parsley. Bake 15 minutes longer. <BR><BR></P></TD></TR></TBODY></TABLE></p>

<p>Yield: 6 servings</p>
<p>3 cups diced ham <br />2 cups dried lentils <br />2 cups diced carrots <br />2 cups diced celery <br />1 cup chopped onion <br />1 tablespoon minced garlic <br />4 cups water <br />2 (10 1/2 ounce) cans chicken broth<br />1 teaspoon dried oregano <br />1/4 teaspoon salt <br />1/4 teaspoon pepper <br />1 (6 ounce) bag baby spinach leaves <br />2 tablespoons fresh lemon juice<br />Lemon slices for garnish</p>
<p>Mix all ingredients except spinach and lemon juice in a 3 1/2-quart or larger crockpot. Cover and cook on HIGH for 4 to 5 hours or on LOW 7 to 9 hours or until lentils are tender.</p>
<p>Stir in spinach, cover and cook 5 minutes or until tender. Stir in lemon juice.</p>

<p>This takes less than 2 minutes to assemble. Anyone can prepare this and turn out a good meal. Not gourmet, but very good!</p>
<p>1 to 2 pounds stew meat<br />1 can cream soup, any kind<br />1 envelope dry onion soup mix<br />1 can mushrooms, with liquid<br />1/2 cup water</p>
<p>Put all ingredients in crockpot and cook all day at LOW setting.</p>
<p>Serve over rice.</p>

<p>2 (2 1/2 pound) chickens, cut into eighths <br />1 onion, chopped <br />2 cloves garlic, chopped<br />Salt and white pepper to taste <br />1 green bell pepper, diced <br />1 medium very ripe tomato, peeled, seeded and chopped <br />1 cup dry white wine<br />Pinch of cayenne pepper</p>
<p>Combine all ingredients in crockpot. Cover and cook on LOW for 6 to 8 hours, or until chicken is tender.</p>
<p>Serve with crusty French bread and sweet butter.</p>

<p>5 whole chicken breasts <br />2 cans cream of chicken soup <br />1 cup mayonnaise <br />2 eggs, hard boiled and chopped <br />1 (8 ounce) can water chestnuts , drained <br />1 cup Pepperidge Farm Herb dressing <br />1/4 cup butter, sliced</p>
<p>Cook chicken breasts and cut up.</p>
<p>Preheat oven to 350 degrees F.</p>
<p>Mix soup and mayonnaise. Add all other ingredients except herb dressing and butter. Place in a casserole dish. Top with dressing and butter slices. Bake for 30 minutes.</p>
<p>Yield: 6-8 servings</p>

<p>2 cups mashed potatoes <br />1 cup hot medium white sauce <br />1 1/2 cups American or Cheddar cheese, grated <br />1/4 teaspoon salt <br />1/4 teaspoon cayenne <br />Dash of pepper <br />2 cups canned salmon, flaked <br />1 cup buttered bread crumbs </p>
<p>Place potatoes in buttered casserole. Combine white sauce, cheese and seasonings, stir until cheese is melted. Pour half of sauce over potatoes. Add salmon to remaining sauce, pour over contents of casserole. Sprinkle with crumbs. Bake in a moderate oven (350 degrees F) 20 minutes. </p>
<p>(For buttered bread crumbs, melt 1-2 tablespoons butter and mix in 1 cup dried bread crumbs.)</p>

<p>1 (10 3/4 ounce) can Campbells Golden Corn Soup<br />1/4 cup each finely chopped celery and onion<br />1 1/2 cups Pepperidge Farm Herb Seasoned or Cubed Stuffing<br />4 skinless, boneless chicken breast halves<br />1 tablespoon firmly packed brown sugar<br />1 tablespoon butter or margarine, melted<br />1 teaspoon spicy mustard</p>
<p>Combine soup, celery, onion and stuffing.</p>
<p>Spoon stuffing mixture into a 9-inch greased pie plate. Arrange chicken over stuffing mixture, pressing lightly into stuffing.</p>
<p>Combine sugar, butter and mustard; spread lightly over chicken. Bake at 400 degrees F for 25 minutes or until chicken is no longer pink.</p>
<p>Servings: 4</p>

<h1>Sausage Stuffed Bell Peppers</h1>
<p>1 box chicken stuffing (regular size, not the large),<br />&nbsp;&nbsp;&nbsp; prepared according to package directions<br />1 tube breakfast pork sausage, browned and drained<br />1 can whole kernel corn, drained<br />4 extra large green bell peppers, seeded, halved, drained<br />Grated Cheddar cheese</p>
<p>Preheat oven to 350 degrees F.</p>
<p>Make stuffing. Combine stuffing, sausage and corn.</p>
<p>Parboil green pepper halves until they are tender but still crisp enough to hold shape. Stuff them with the meat mixture. Place them in a large baking pan and add about 2 tablespoons of water to the pan. Bake for 20 minutes.</p>
<p>Remove from oven, then sprinkle peppers with the Cheddar cheese, and return to the oven for 15 minutes, or until cheese melts.</p>
<p>These can be reheated in a casserole or in a microwave.</p>

<p>Serves 1.</p>
<p>1 small box elbow macaroni<br />3 cups Cheddar cheese, shredded<br />1 can evaporated milk<br />1 1/2 cups homogenized milk<br />3 eggs<br />1/4 cup (1/2 stick) butter<br />Salt and pepper to taste</p>
<p>Cook macaroni according to directions on box. Grease crockpot with butter. Mix all ingredients in crockpot. Cook on HIGH for 30 minutes then turn on LOW and cook for 2 hours.</p>

<p>1 cup sour cream<br />1 tablespoon flour<br />1 envelope chicken gravy mix<br />1 cup water<br />1 pound boneless skinless chicken breast<br />&nbsp;&nbsp;&nbsp; halves, cut into 1-inch pieces<br />1 (16 ounce) package frozen stew vegetables, thawed<br />1 (4 ounce) can sliced mushrooms<br />1 cup frozen peas, thawed<br />1 1/2 cups biscuit baking mix<br />4 scallions, chopped<br />1/2 cup milk</p>
<p>Mix sour cream, all-purpose flour, gravy mix and water in 3 1/2- to 4-quart crockpot until smooth. Stir in chicken, stew vegetables and mushrooms.</p>
<p>Cover and cook on LOW for 5 hours or until chicken is tender and sauce is thickened. Stir in peas. Mix baking mix and scallions. Stir in milk just until moistened. Drop dough by rounded tablespoonsful onto chicken-vegetable mixture. Cover and cook on HIGH for 45 to 50 minutes or until wooden pick inserted in center of dumplings comes out clean. Serve immediately.</p>
<p>Yields 4 servings.</p>

<p>1 baked beans recipe, uncooked<br />1 (15 ounce) can red kidney beans, drained and rinsed<br />1 (14 ounce) package Butterball turkey Polska kielbasa,<br />&nbsp;&nbsp;&nbsp; cut into 1/4 inch rounds </p>
<p>Mix kidney beans and sausage into baked beans. Place in a 2 1/2-quart casserole dish and bake at 350 degrees F for 60 minutes or until bubbly and heated through. Serve as is or on top of hot cooked rice. </p>
<p>Variations: Use your familys favorite bean in place of the kidney beans. Add bacon or chunks of smoked ham or turkey instead of the sausage. Or place in a shallow baking dish with pork chops or boneless skinless chicken breasts and pour bean mixture on top. To serve pull out the pork chops/chicken and plate. Place the bean mixture on a bed of rice or just plain on the side or you can top the pork/chicken with the beans. Add some green beans (or favorite vegetable) as a side dish, salad and some rolls and you have one big hearty meal.</p>

<h1>Roast Lemon Chicken</h1>
<p>1 to 3 pounds chicken breasts<br />1 tablespoon crumbled dried oregano<br />2 cloves garlic<br />2 tablespoons butter<br />1/4 cup water<br />Salt and pepper<br />3 tablespoons lemon juice</p>
<p>Wash chicken and pat dry. Season with salt and pepper. Sprinkle half the oregano and garlic inside the cavity.</p>
<p>Melt butter in a large skillet. Brown chicken on all sides. Transfer to crockpot. Sprinkle with remaining oregano and garlic. Add water to skillet and stir to loosen brown bits. Pour into crockpot. Cover and cook on LOW for 8 hours.</p>
<p>Add lemon juice the last hour of cooking.</p>

<p>4 or 5 (10 ounce) package frozen chopped spinach<br />1 envelope dry onion soup mix<br />1/4 cup margarine<br />1 cup sour cream<br />1/2 cup grated Parmesan cheese</p>
<p>Cook spinach according to package directions. Drain well. Add remaining ingredients. Mix well. Pour into buttered casserole dish. Sprinkle more Parmesan cheese on top. Bake at 350 degrees F for 25 minutes or until heated through.</p>

<p><u>Tomato Sauce Layer</u><br />2 tablespoons olive oil<br />1 pound lean ground beef<br />2 to 4 large cloves garlic (to taste)<br />1 (6 ounce) can tomato paste<br />1 (28 ounce) can crushed tomatoes<br />1 teaspoon dried oregano leaf<br />1 tablespoon dried basil (or to taste)<br />1 small bay leaf</p>
<p><u>Cheese and Onion Layer</u><br />8 ounces cream cheese, softened<br />1 cup cottage cheese<br />1/4 cup sour cream<br />1/3 cup thinly-sliced green onions,<br />&nbsp;&nbsp;&nbsp; white and light green part only</p>
<p><u>Spaghetti Layer</u><br />2 tablespoons plus 2 teaspoons olive oil<br />1/2 pound dry spaghetti noodles</p>
<p>Make the tomato sauce layer first: heat 2 tablespoons olive oil over medium<br />heat in a large saucepan. Add ground beef, breaking into small pieces and stirring occasionally until browned. Add garlic and onion and saut? until onion is transparent. Add tomatoes, tomato paste, oregano, basil and bay leaf. Cover with pan lid ajar to let some steam escape and simmer at least 30 minutes, and up to 3 hours to let flavors develop.</p>
<p>Add water (or a little red wine) if necessary to keep the sauce from getting too dry. Remove the bay leaf before assembling the casserole. Make spaghetti according to package directions, adding 1tablespoon of olive oil to the boiling water to keep noodles from sticking together. Cook until al dente (firm, not mushy) and drain well.</p>
<p>While spaghetti is cooking, make creamy cheese and onion layer by mixing the cream cheese, cottage cheese, sour cream together in a food processor or blender until smooth and well combined. Stir in the green onions. Oil a large bowl or 2-quart casserole with 2 teaspoon olive oil. Preheat oven to 350 degrees F.</p>
<p>Assemble casserole by adding 1/2 of spaghetti noodles to bottom of casserole, drizzle with about 1/2 tablespoon olive oil, top with 1/2 of creamy cheese and onion mixture, then 1/2 of tomato sauce. Repeat, ending with tomato sauce on top of casserole. Poke a dinner knife into the finished casserole in 4 to 6 places and wriggle it around to allow some of the tomato sauce to work its way into the noodle and cheese layers. Bake, uncovered, about 30 minutes.

<h1>Barley with Brown Butter and Scallions</h1>
<p>3 quarts water<br />2 teaspoons salt<br />3 cups hulled (whole-grain) barley<br />1/4 cup butter<br />4 scallions<br />Salt and pepper, to taste</p>
<p>Put the water into a large 5- or 6-quart pot. Add the salt and stir. Bring the water to a boil and add the barley, stirring. Turn the heat to medium so it is still boiling, but not fiercely. Cook for 45 minutes.</p>
<p>While the barley is cooking, put the butter in a small saucepan. Turn the heat to medium-high and stir the butter as it melts. When it has melted, tilt and tip the pan so the melted butter moves all around the bottom and doesn	 burn. When the butter turns a rich caramel color, remove from the heat. It should be brown, but not dark brown. This takes only a couple of minutes so don	 turn your back on it. Set aside.</p>
<p>Place the scallions on a cutting board and trim off the root ends and 4 or 5 inches of the coarse green tops. Finely chop the onions. Set aside.</p>
<p>When the barley has cooked for 45 minutes, check it for doneness by scooping out a few grains with a spoon and tasting them. If the grains are chewy and tender, the barley is done. If the grains are still tough and firm, cook the barley for 15 minutes longer, then test again for doneness. When done, pour the water and barley into a strainer.</p>
<p>Measure 3 cups of cooked barley and put into a serving bowl. (Let the remaining barley cool, then transfer to a container, cover tightly and refrigerate or freeze until needed.)</p>
<p>Add the brown butter and scallions to the barley in the bowl, taste and add more salt and some pepper if needed. Serve hot.</p>
<p>Yields 3 cups.</p>

Place slices on paper towels; sprinkle each generously with salt. let stand for 30 minutes; then blot dry with paper towels. Start heating oven to 400 deg. F. Saute eggplant in 1/4 cup salad oil until golden. Add more oils as needed. Cut tomatoes into 1/2-inch thick slices; saute in same skillet. In a 10&#215;6x2 inch baking dish, arrange eggplant and tomatoes in alternate layers, (4 in all), sprinkling each layer with 1/4 teaspoon salt and 1/8 teaspoon pepper. Combine bread cubes with parsley, garlic, 1 tablespoon salad oil and cheese. Toss well. Sprinkle over top layer. Bake 20 minutes or until bread cubes are golden and eggplant is tender. <p>2 pounds ground beef <br />1 can cream of mushroom soup <br />2 cans ready to bake crescent rolls <br />1 package (about 8 slices) Swiss cheese <br />1 head cabbage, finely shredded <br />1 medium onion, diced</p>
<p>Grease a 9 x 13-inch pan. Cover the bottom of the pan with 1 package of crescent rolls.</p>
<p>Brown ground beef with cabbage and onions. Drain grease from ground beef. Combine ground beef, cabbage and onion with cream of mushroom soup. Pour over crescent rolls. Layer top of ground beef mixture with Swiss cheese. Open second can of crescent rolls and layer over top of Swiss cheese, trying to cover all the cheese, so the cheese does not become browned during baking. Bake at 350 degrees F for 20 to 25 minutes.</p>

Beat together with cream cheese and set aside. In a 11&#215;7&#8243; baking dish, combine remaining salsa and enchilada sauce; reserve 1/2 cup sauce. Stir in the rice and set aside. Pound the chicken breast halves to about 1/2 inch thickness. Spoon 1/4 of the cream cheese mix into the center of a chicken breast half. Roll up and place seem side down on rice. Repeat with all the breast halves. Pour reserved sauce over chicken. Bake in a preheated 350~ oven for 45-60 minutes or until chicken is done. <P><BR><BR></P></TD></TR></TBODY></TABLE></p>

<p>1/2 cup crushed pineapple <br />2 tablespoons lemon juice or juice of 1/2 lemon <br />2 tablespoons soy sauce <br />3 mashed peaches <br />1 whole chicken, cut up
<p>Spray crockpot with nonstick spray.</p>
<p>Mix pineapple, lemon juice, soy sauce and peaches in a large bowl. Dip chicken in the sauce and place in crockpot. Cover with remaining sauce.</p>
<p>Cook on LOW for 6 to 8 hours.</p>

<p>1 1/2 pounds stew meat<br />4 carrots<br />1 can stewed tomatoes<br />1 teaspoon salt<br />1 bay leaf<br />Pinch of thyme<br />Pinch of marjoram<br />1 cup red wine</p>
<p>Combine ingredients and place in casserole. Cover tightly. Place in oven at 250 degrees F for 5 hours. Thicken with flour and water before serving.</p>
<p>Serve with dumplings, mashed potatoes or cooked noodles.</p>

<p><TABLE cellSpacing="2" cellPadding="3" border="0"><TBODY><TR><TD><P>1 lb Ground pork <P>1/2 c Onion, chopped <P>1/2 cl Garlic, minced <P>2 tb Oil <P>1 cn Tomato sauce 8 oz. <P>1 cn Tomato paste 6 oz. <P>1 cn Mushrooms with juice 3 oz. <P>1/2 ts Salt <P>1/8 ts Pepper <P>1 pk Elbow macaroni 7 oz. cooked <P>2 c Sharp cheese, grated <P>Cook pork, onion, and garlic in hot oil until onion is golden. Add tomato sauce, tomato paste, mushrooms and seasonings and simmer 15 minutes. Alternate layers of macaroni, cheese and meat in greased 2 quart casserole. <p>2 cups diced, cooked chicken<br />1 (16 ounce) bag frozen broccoli, carrots and cauliflower,<br />&nbsp;&nbsp;&nbsp; thawed and drained<br />1 can cream of mushroom soup<br />1/3 cup sour cream<br />1/4 teaspoon pepper<br />1 cup shredded Swiss cheese, divided<br />1 can French fried onions, divided</p>
<p>Combine all ingredients except the cheese and onions. Add one-half of the cheese, and one-half of the onions. Pour into casserole; bake uncovered, at 350 degrees F for 30 minutes.</p>
<p>Top with remaining cheese and onions; bake uncovered 5 minutes longer.</p>

<p><TABLE cellSpacing="2" cellPadding="3" border="0"><TBODY><TR><TD><P><P>150 grams brown rice &#8212; * <P>1 vegetable bouillon cube <P>250 grams Brussel sprouts <P>1 red bell pepper <P>100 grams Leerdammer cheese <P>2 eggs &#8212; beaten lightly <P>3/4 teaspoon basil <P>2 tablespoons creme fraiche <P>5 sprigs chives &#8212; for garnish <P>- - - - Optional Cashew Garnish - - - - 100 grams cashews <P>1 1/2 tablespoons honey <P>1 knifepoint sambal &#8212; about 1/4 tsp <P><P>* Original recipe called for broken white rice, which cooks faster. I used round brown rice instead. <P>Start rice cooking with bouillon cube. Warm grill [or oven] to highest. <P>Clean the sprouts. Cook in boiling water [?or steam] for about 10 min. Meanwhile, wash the bell pepper and chop it. Add to the sprouts and cook another 5 min, till both are done. Drain. <P>Grate about 1/4 of the cheese; slice the rest. <P>Into the rice, stir the sprouts and bell pepper, eggs, basil, grated cheese, and creme fraiche. Turn into a flat casserole dish or two individual dishes. Top with sliced cheese. Put under the grill for about 5 min, until the cheese is melted. Top with chives. Serve with cashew garnish. <P>To make cashew garnish: In a small saucepan or skillet over medium-high heat, stir together cashews, ho ney, and sambal, about 5min. <BR><BR></P></TD></TR></TBODY></TABLE></p>

<p>3 country-style boneless pork ribs<br />1 can black beans<br />1 cup frozen corn<br />2 small or 1 large tomato, diced<br />1/2 onion, preferably red, chopped<br />Cilantro, to taste<br />Cooked rice (optional)</p>
<p>Cut ribs into 1-inch cubes and place in crockpot. Add beans, corn, tomato and onion to pork. Add enough water to cover. Cook on LOW for 6 to 8 hours, adding cilantro just before serving over white rice.</p>

<p><TABLE cellSpacing="2" cellPadding="3" border="0"><TBODY><TR><TD><P><P>1/4 C. olive or salad oil <P>1 C. chopped onion (optional) <P>3 Cloves garlic &#8212; crushed <P>4 Bottles clam juice &#8212; (8 oz.) <P>2 Cans whole &#8212; (1 lb. 12 oz.) <P>peeled tomatoes, undrained 1 orange peel spiral (2-inches) <P>3/4 Tsp. salt <P>1 Lb. cod steaks <P>1/4 Tsp. crumbled saffron <P>1/4 Tsp. fennel seed <P>1/8 Tsp. dried thyme leaves <P>1/8 Tsp. pepper <P>2 bay leaves <P>2 Pkg. frozen rock-lobster tails &#8212; (8 oz.) <P>1 Lb. halibut steaks <P>1/2 Lb. sea scallops <P><P>Heat olive oil in an 8 quart kettle. Add chopped onion and 3 cloves garlic; saute until onion is tender, 5 minutes. Add clam juice, undrained tomatoes, 3/4 cup water, orange peel spiral, salt, saffron, fennel seed, thyme, pepper and bay leaves; bring to boil. Reduce heat and simmer mixture, covered 30 minutes, stirring occasionally. Remove from heat and let cool, about 1 hour. Then refrigerate, covered, overnight. Next day, with sharp knife, cut the frozen lobster tails (shell and all) in half crosswise. Wipe cod and halibut with damp paper towels. Cut into 1 1/2-inch pieces or leave whole. Rinse sea scallops in running cold water; drain. Bring tomato mixture to boil. Add frozen lobster. Simmer, covered, 4 minutes. Add cod and halibut pieces; simmer covered 10 minutes. Add sea scallops over low heat, 5 minutes. Spoon bouillabaisse over garlic toast. You can substitute for different varieties of fish, if desired. <BR><BR></P></TD></TR></TBODY></TABLE></p>

<p><u>Dumplings</u><br />2 cups prepackaged buttermilk biscuit mix<br />2 teaspoons dried basil<br />2/3 cup milk</p>
<p>In a large saucepan, saut? onion, celery and garlic in butter until tender. Add flour, sugar, salt, basil, pepper and broth; bring to a boil. Cook and stir for one minute; reduce heat. Add peas and cook for 5 minutes, stirring constantly. Stir in cubed chicken. Pour into a greased 13 x 9 x 2-inch baking dish.</p>
<p><u>12 Dumplings</u><br />Combine biscuit mix and basil in a bowl. Stir in milk with a fork until moistened. Drop by tablespoonsful onto casserole Bake, uncovered, at 350 degrees F for 30 minutes. Cover and bake 10 minutes more or until dumplings are done.</p>

<p>4 pounds stew meat (DO NOT BROWN)<br />3 to 4 potatoes<br />3 to 4 carrots<br />3 to 4 ribs celery<br />1 large onion<br />1 can tomato soup<br />1 can beef broth or 1 bouillon cube<br />1 large can tomatoes<br />1 tablespoon A-1? sauce<br />4 tablespoons Minute? tapioca<br />1 green bell pepper<br />Salt and pepper<br />1 clove garlic, crushed</p>
<p>Cut all vegetables into chunks. Place all ingredients in a heavy kettle and bake, covered, for 5 hours at 275 degrees F. Add water, if necessary, during cooking. Stir during the last hour of baking.</p>

Discard drippings (or store in your cherished drippings jar). Place all ingredients except for 1/2 pound of the kielbasa into a large stockpot. Bring to a boil and simmer for about 1 hour. <h1>Chicken and Macaroni Dinner</h1>
<p>Serves 6 to 8.</p>
<p>4 boxes Kraft macaroni dinner<br />3 cans chicken chunks<br />1 cup powdered milk in zip-type bag<br />6 packets Cup-o-Soup, flavor of your choice<br />Salt, pepper and paprika</p>
<p>In large pot, heat 4 quarts of water to rolling boil. Do not salt water. Add macaroni to water and stir constantly until boil resumes. Stir occasionally to keep from sticking. May have to reduce heat to prevent boil over. Cook 8-9 minutes until macaroni is tender.</p>
<p>Open chicken and add chicken and juice to pot. Break up chunks of chicken with spoon. Cook for a minute or two to heat chicken.</p>
<p>Remove pot from stove (turn off heat) or fire. Use cup or ladle to dip off excess water and use to make Cup-o-Soup as appetizer. Water remaining should be no more than enough to cover 1/4 of macaroni. Save excess water for future use.</p>
<p>Add powdered milk and cheese powder and a pinch or two of salt to pot and stir thoroughly until cheese is melted and macaroni is well coated. If macaroni is too thick, add a little of the saved water.</p>
<p>Serve in bowls, and season with salt, pepper and paprika to taste.</p>

<p>Saute onion, pepper and garlic in oil. Add salt, pepper, beef stock, tomatoes, mushrooms and barbecue sauce. Add to crockpot and cook on LOW for 8 to 10 hours.</p>
<p>Mix cornstarch and cold water and thicken before serving.</p>
<p>Serve over hot cooked rice.</p>

<p><TABLE cellSpacing="2" cellPadding="3" border="0"><TBODY><TR><TD><P>1/2 lb Potatoes <P>1 ea Parsley sprig <P>1/4 lb Carrots <P>1 ea Celery leaf <P>1/4 lb Parsnips <P>2 oz Onions <P>1/4 lb Turnips <P>2 tb Oil <P>1/2 tb All purpose flour <P>&#8212;&#8212;&#8212;DUMPLINGS&#8212;&#8212;&#8212;- 2 tb Oil <P>4 tb Wholewheat flour <P>1/4 c Wholewheat breadcrumbs <P>1/4 c Finely chopped walnuts <P>Cut peeled &amp; washed vegetables into small cubes. Combine oil &amp; 1 1/2 cups of vegetables. Cook till ight brown. Add flour &amp; mix well. Add a pint of water &amp; the rest of the vegetables. Cook slowly for about 90 minutes. Season to taste &amp; serve with the dumplings. DUMPLINGS: Work oil into flour, crumbs &amp; nuts. Add enough water to make a stiff dough. Roll &amp; cut into walnut sized pieces. <p>Ready in 15 minutes.</p>
<p>Servings: 4</p>
<p>1 pound ground beef <br />2 cups water <br />1 package taco seasoning <br />2 cups Minute Rice <br />1 cup shredded Cheddar cheese <br />1/4 teaspoon pepper<br />Coarsely crushed tortilla chips<br />Shredded lettuce<br />Chopped tomato<br />Sour cream</p>
<p>Brown meat in large skillet over medium-high heat; drain. Add water and seasoning mix to skillet; stir. Bring to boil. Stir in rice. Sprinkle with cheese, cover. Cook on low heat for 5 minutes. Top as desired with ingredients above and enjoy!</p>

<p>4 (3/4-inch thick) bone-in pork loin chops<br />1/2 teaspoon salt<br />1/4 teaspoon pepper<br />1 medium onion, cut into 1/4-inch slices<br />1 medium lemon, cut into 1/4-inch slices<br />1/4 cup packed brown sugar<br />1/4 cup ketchup</p>
<p>Place pork chops in crock pot. Sprinkle with salt and pepper. Top with onion and lemon. Sprinkle with brown sugar; drizzle with ketchup. Cover and cook on LOW for 6 hours or until meat juices run clear.</p>

<h1>Chocolate Zucchini Nut Bread</h1>
<p>1/2 cup shortening<br />1 cup granulated sugar<br />2 eggs<br />1 teaspoon vanilla extract<br />1 teaspoon baking soda<br />1/3 cup baking cocoa<br />1 1/4 cups zucchini, pureed or blended<br />3 tablespoons milk<br />2 cups all-purpose flour<br />1/2 cup walnuts, chopped</p>
<p>Cream sugar and shortening in mixer. Beat in eggs one at a time. Add vanilla extract. Add everything else and mix thoroughly. Pour into a greased 2-pound coffee can or a crockpot bread insert. Cook for 3 hours on HIGH, or until the nut bread tests done with a wooden pick.</p>
<p>Let stand until its medium cool to the touch before unmolding.</p>
<p>Serve with butter or cream cheese.</p>

<p>1 pound ground beef <br />2 cans Mexican-style stewed tomatoes, undrained <br />1 package brown gravy mix <br />Chili powder to taste, optional <br />Sour cream, optional <br />Corn chips or Doritos, crushed </p>
<p>Brown beef and drain fat. Add tomatoes and gravy mix, stirring well over medium heat. Add chili powder (NOTE: if you like it mild, don	 add any chili powder). Simmer for 5 to 10 minutes until heated through.</p>
<p>Serve over corn chips or Doritos with sour cream.</p>
