Crockpot Pork and Beans

3 country-style boneless pork ribs
1 can black beans
1 cup frozen corn
2 small or 1 large tomato, diced
1/2 onion, preferably red, chopped
Cilantro, to taste
Cooked rice (optional)

Cut ribs into 1-inch cubes and place in crockpot. Add beans, corn, tomato and onion to pork. Add enough water to cover. Cook on LOW for 6 to 8 hours, adding cilantro just before serving over white rice.

Serves 4.

    Lemon Pork Chops

    4 (3/4-inch thick) bone-in pork loin chops
    1/2 teaspoon salt
    1/4 teaspoon pepper
    1 medium onion, cut into 1/4-inch slices
    1 medium lemon, cut into 1/4-inch slices
    1/4 cup packed brown sugar
    1/4 cup ketchup

    Place pork chops in crock pot. Sprinkle with salt and pepper. Top with onion and lemon. Sprinkle with brown sugar; drizzle with ketchup. Cover and cook on LOW for 6 hours or until meat juices run clear.

      Though the ingredients may sound weird I actually made these tonight and they were very good.

      1 1/2 pounds country style spareribs
      1/3 cup maple syrup
      1 tablespoon soy sauce
      2 tablespoons dried minced onion
      1/2 teaspoon garlic powder
      1/4 teaspoon cinnamon
      1/4 teaspoon ginger
      1/4 teaspoon allspice
      Dash of black pepper

      Place pork in crockpot. Combine remaining ingredients; pour over pork. Cover and cook on LOW 7-9 hours.

        Curried Ham and Broccoli

        2 (10 ounce) packages frozen chopped broccoli
        3 cups diced ham
        1 can Cheddar cheese soup
        1 cup water
        1/2 cup mayonnaise
        2 tablespoons dried onions
        1 tablespoon lemon juice
        1/4 teaspoon curry powder

        Place broccoli evenly in bottom of crockpot. Add ham. Combine soup, water, mayonnaise, onion, lemon juice and curry powder in small mixing bowl. Stir until blended. Pour soup mixture over broccoli. Cover and cook on LOW for 2 hours.

        Serve with buttered noodles.

        Makes 8 servings.

          Zingy Ribs

          3/4 cup vinegar
          1/2 cup catsup
          2 tablespoons granulated sugar
          2 tablespoons Worcestershire sauce
          1 clove garlic, minced
          1 teaspoon ground mustard
          1 teaspoon paprika
          1/2 teaspoon salt
          1/8 teaspoon pepper
          2 pounds pork spareribs
          1 tablespoon vegetable oil

          Combine the first nine ingredients in a crockpot.

          Cut ribs into serving-size pieces; brown in a skillet in oil. Transfer to crockpot. Cover and cook on LOW for 4 to 6 hours or until tender.

            pork roast with peach chutney

            Pork Roast with Peach Chutney

            1 (16 ounce) can sliced peaches, drained
            1/4 cup raisins
            1/4 cup brown sugar, firmly packed
            1/4 cup vinegar
            1/2 small onion
            1 tablespoon prepared mustard
            1 (3 to 4 pound) pork loin roast

            Combine all ingredients except roast in blender or food processor. Process until coarsely chopped.

            Place roast in crockpot and pour chutney over top. Cover and cook on LOW for 8 hours or on HIGH for 4 hours.

              Pineapple Marinated Pork Chops

              6 pork chops
              1 (20 ounce) can pineapple chunks, including juice
              1/4 cup packed brown sugar
              2 teaspoons soy sauce

              Put pork chops into a plastic zip-type bag.

              Mix remaining ingredients; pour over pork chops in bag. Store in refrigerator overnight.

              Put everything into a crockpot and cook on LOW for 6 to 8 hours or until done.

              Serves 6.

                Plantation Pork Chops

                4 double cut loin pork chops with pocket
                2 cups cornbread stuffing mix
                2 tablespoons butter, melted
                1/4 teaspoon salt
                1/2 cup orange juice
                4 tablespoons finely chopped pecans
                Salt and pepper
                1/4 cup light Karo syrup
                1/2 teaspoon grated orange rind

                Combine stuffing mix, butter, 1/4 teaspoon salt, orange juice and pecans. Fill pockets of chops with stuffing mix. Sprinkle with salt and pepper. Put on metal rack on bottom of crock pot, brush with corn syrup, and sprinkle with orange rind. Cover, and cook on LOW for 6 to 8 hours.

                Uncover, and brush with additional corn syrup and orange rind, or use sauce from bottom of pan,. Cover and cook on HIGH for 15 to 20 minutes.

                  5 (16 ounce) cans pork and beans
                  2 (8 ounce) cans tomato sauce
                  2 onions, chopped
                  6 hot links, sliced
                  1/4 average size bottle barbecue sauce
                  Worcestershire sauce, to taste
                  Hot sauce, to taste
                  Cajun Seasonings, to taste
                  Liquid Smoke, to taste
                  Mustard, to taste
                  Brown sugar, to taste

                  Mix all ingredients in a crockpot. Cook all day on HIGH, stirring occasionally.

                  Pork Roast el Mexico

                  1 (4 or 5 pound) pork roast
                  1 pound pinto beans
                  4 tablespoons chili powder
                  1/2 teaspoon ground cumin
                  1 package taco seasoning
                  2 cans tomatoes and chiles
                  4 to 4 1/2 cups water
                  Corn chips
                  Onion slices
                  Cheddar cheese, shredded

                  Combine all ingredients except corn chips, onion and cheese in crockpot, and cook on LOW for 12 hours or overnight. Remove grease and bones.

                  To serve, put corn chips on plate. Cover with pork mixture, slices of onion rings and cheese on top.
